Observation (CORRECTED DURING INSPECTION): Bleach was at 10 ppm chlorine residual when employees began grinding meat.
Corrective Action(s): Bleach was replenished and was at 200 ppm. Ensure that you maintain a bleach sanitizing pail of 200 ppm before you start processing any meat items, so that food contact surfaces can be sanitized.

Observation: Display cooler was at 12C and has not been serviced yet.

Full power restored to facility. Meat cooler now at 2C. Items in display freezers range from -4 to -10C - ensure that you have a technician service if the display freezer does not reach -18C. Display cooler still at an ambient temperature of 12C - staff had already voluntarily discarded additional items including: 3 boxes of 12 dozen eggs (144 eggs/box), Tamarind drinks x 6, and 4 boxes of yogourt (each bottle ~ 400 ml x 15 / box).

Ensure that the display cooler does not contain any potentially hazardous foods until it is serviced and can maintain 4C or less at all times.

Notes on meat processing area:
Staff began disassembling and sanitizing the meat grinder near end of inspection - good
Staff reminded to throw away gloves after each use, and to use the hand wash station to wash their hands before and after putting on gloves

Do not accept any new shipments of dairy and eggs, packaged meats until the display cooler has been fixed.
