Observation (CORRECTED DURING INSPECTION): Sink plugs available for the 3-compartment sink; however, staff were unfamiliar with the manual ware washing method consisting of wash, rinse, and sanitize.
Corrective Action(s): Review manual ware steps with staff. Ensure all equipment was sanitized with a 100ppm chlorine (dilute 25ml regular bleach with 4 liters of water) after the wash and rinse step.

Observation: Utensils were being sanitized in large pails place in the 3-compartment sinks. No sink plugs were available.
Correction: All utensils and equipment are to be washed, rinsed, and sanitized in accordance with the 3-compartment sink method whereby the individual sinks are properly filled.
