Corrective Action(s): 1. Relocate area to a designated food storage area and clean up all spilt product (1 day). 2. Once opened, canned contents must be transferred to food grade container if not used immediately (today). Violation Score: 3 306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: Fallen food debris observed below standup firdge (back corner). Corrective Action(s): Cleaning required (1 day), do not leave potential food sources for pests. Violation Score: 3 307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19] Observation: Duct tape wrapped around knife with blue handle. Duct tape is not conducive to cleaning. This was observed in prep room #3143. Corrective Action(s): Remove knife from operation (today). Violation Score: 3

Main Preparation Area Handsink fully stocked with hot and cold running water available. Sanitizer bucket ~ 200 ppm chlorine detectable. Undercounter freezer -11 C. Undercounter dairy cooler 2 C. Ice machine in satisfactory condition --> take winter holidays as opportunity to do a thorough cleaning. All hot items were pulled offline as stored was preparing to close. Rice warmer 66 C.
