Observation (CORRECTED DURING INSPECTION): No detectable sanitizer in dishwasher final rinse. See #308 for directions. Discussed manual sanitizing.

Observation: 1) Numerous prepared veggies in the walk in fridge are not covered.
Always keep foods in the fridge covered.
2) A bowl is used for an ice scoop in ice machine. Stored submerged in ice. Do not use a bowl for an ice scoop - use a proper scoop with a handle and store in a clean container outside the machine.
3) Dry storage bulk material containers are crusted with food debris. Empty and clean containers before re-filling them.

Observation: Dishwasher (low temp) has no detectable chlorine sanitizer in final rinse. Operator has no test strips and is not testing regularly.
The following are required:
1) Have dishwasher repaired.
2) Sanitize all dishes manually until dishwasher is repaired. Keep a sinkful of sanitizer prepared until dishwasher is repaired.
3) Obtain test strips and test dishwasher at least once daily to make sure it is sanitizing properly.
