Observation (CORRECTED DURING INSPECTION): The sanitizer bucket available showed 0 ppm chlorine.
Corrective Action(s): Chlorine sanitizer should be between 100 to 200 ppm, in order to adequately destroy microbes that may be present on food contact surfaces. The operator prepared two buckets with chlorine sanitizer 200 ppm and dispersed cleaning rags inside so they may be readily available to employees.

Observation (CORRECTED DURING INSPECTION): The hand washing stations did not have soap and/or paper towels available.
Corrective Action(s): All hand washing stations that are being used by employees must be stocked with paper towels and soap at all times to prevent spread of foodborne pathogens.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): An employee was seen drying her hands with the same cloth towel repeatedly during the inspection.
Corrective Action(s): Reusable hand towels are not permitted because they can be contaminated with microbes that may in turn spread to the food being prepared by the employee. The operator and emplyee were explained this, and agreed to stop using the cloth towel for wiping their hands, and instead will use paper towels, which they will dispose of after each use.

Observation: The stand up coolers and freezers have a build up of filth and food waste.
Corrective Action(s): This is unsanitary and may attract pests. Clean the mentioned hard to reach areas, and clean this areas more frequently to avoid build up.
