Observation (CORRECTED DURING INSPECTION): Back handwash station did not have single use paper towels.
Corrective Action(s): Ensure handwash stations are accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper handwashing. Single use paper towels were refilled at the time of inspection.

Comments

-Walk-in cooler was at 0C.
-Walk-in freezer was at -14C.
-Meat display cooler ranged from 3C to 4C.
-Customer area coolers were at/or below 4C.
-Cutting room was less than 10C.
-Temperatures checked and recorded daily.
-Cleaning and sanitizing carried out at the 2-compartment sink. Quats sanitizing dispenser tested at 200ppm.
-Sanitizer pail and spray bottle was at 200ppm.
-Meat saw and grinder sanitized every 4 hours. Equipment broken down at the end of the day for thorough cleaning and sanitizing.
-General sanitation was good at the time of inspection. Deep cleaning carried out weekly.
-No signs of pests noted at the time of inspection. Facility is serviced weekly by professional pest control services.
