203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Hot foods being placed in 20 liter pails to cool.
Corrective Action(s): Foods must be cooled in shallow pans, in an ice bath or by using a chill stick to maximize cooling of the food.
NOTE:
Chill sticks should be filled with water and then frozen for use, not filled with ice cubes as needed as this is not an effective way to cool food as ice cubes melt much more rapidly than a solid block of ice.
Make sure that chill stick is thoroughly sanitized before placing in the food.

208 - Foods obtained from unapproved sources [s. 11]
Observation: Foods in the freezers and coolers are not labeled as to contents, where/when purchased/prepared and do not have any nutrition labeling or ingredient lists.
Corrective Action(s): All foods must be clearly labeled with where they were purchased, when they were prepared, and what the contents of each container/bag is.
This has been an ongoing issue, progressive enforcement implemented.

209 - Food not protected from contamination [s. 12(a)]
Observation: Foods in walk-in cooler not covered to prevent contamination, and several buckets of sauce are uncovered on the floor of the cooler.
Corrective Action(s): All food must be covered - even when cooling food - to prevent both physical and microbial contamination of the food. If cooling the food a small vent corner can be left open but the rest of the food must be covered.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Food spills, splatters, debris throughout the premises, chest freezer has approximately two inches of frost/ice accumulation on walls and over lip of cover.
Strong urea smell in dishwashing area, grease trap does not have a proper lid in place and all plumbing appears to be leaking leaving ponding water on the floor that is developing organic mats in these pools of water.
Corrective Action(s): Premises needs a thorough cleaning and sanitizing of back storage area, especially around the chest freezer, shelving, and the dishwashing area.
All plumbing must be repaired to prevent leaks - this includes reattaching the hand sink to the wall so that it can not be moved causing the plumbing seals to fail.
Grease trap must be repaired/replaced to prevent the entrance of sewer gas into the restaurant.
Flooring must be cleaned and sanitized and all spilled water wiped up immediately.
Monitor dishwashing practices to ensure that dish racks are not draining onto the floor, drain on a proper shelf that coved to direct dripping water to the drain sink or dishwasher.
Make sure that there is a physical separation between clean and dirty dishware to prevent cross contamination.
