Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (No chlorine sanitizer detected during final rinse of the dishwasher.)
Comments

Dishwasher has now been repaired. Chlorine concentration at the final rinse tested 100 ppm.
* You must test and record chlorine sanitizer level in the dishwasher and in the sanitizer buckets once a day.
* Use a separate log sheet to record cooler and hot holding temperatures.

Walk-in cooler shelves, floor and fan cover have been cleaned.
Dry storage room including floor behind the deep freezers have been cleaned.
Floor underneath the dish pit has been cleaned.
The old line cooler has been decommissioned. The new line cooler registered 2 C at the time of inspection.
Hot holding of soups registered 65 degrees C.

Following items are still outstanding:
1. Replace the back splash behind the dish sliding table (July 15, 2016).
2. Clean the interior surface of the glass wall near by the the deep fryers (ASAP).
3. Clean and organize the staff washroom and dressing room.
4. Clean and service the bar cooler (By June 20, 2016).
