- Dry ingredient bins and lids
- Dough machine
- Prep surfaces
- Walls
- Ventilation canopy requires professional cleaning/servicing

Comments

- Hand sink was supplied with hot and cold running water, liquid soap, and paper towels. **Remove the bar soap at the hand sink. Only liquid soap that can be dispensed in single-use portions must be used for hand washing.
- Coolers measured to be at or below 4C
- Freezer temperatures satisfactory
- Hot holding case measured to be above 60C
- Three-compartment sink available for manual warewashing
- Bleach solution available at 200 ppm for sanitizing surfaces. *Ensure to mix only 1 tsp bleach with 1 litre water for proper concentrations.
- Food storage practices satisfactory
- General sanitation requires improvement
- No signs of new rodent droppings noted at time of inspection. Remove any old droppings during cleaning and ensure to sanitize with bleach solution.

- Ensure to take the FOODSAFE level 1 refresher course prior to July 29, 2018.
- Continue to de-clutter storage area and back kitchen area.
