Observation (CORRECTED DURING INSPECTION): Three inserts of gravy sauce were probed between 38C and 50C. Restaurant has just opened for the day.
Corrective Action(s): Potentially hazardous foods must be reheated rapidly to 74C prior to storing the in the hot holding unit to prevent the growth of pathogens and or the formation of toxins. Gravy was reheated to greater than 74C and placed in the hot holding unit at the time of inspection.

Comments

-Follow-up inspection to student inspection conducted April 13, 2018.
-Gravy in the walk-in cooler was made on April 23, 2018 (4 days ago). Items were probed at 4C, but cooling procedures could not be verified, since so much time has elapsed since the product was made. Facility has one ice wand and two ice packs to facilitate cooling of foods. Recommend operator obtain proper cooling wands rather than ice packs - ice packs are filled with non-food grade chemicals.
-Facility has been serviced by a professional pest control operator. Report states one rodent was found in the facility. Pest control will service facility on a monthly basis. To prevent pest attraction, operator is recommended to raise shelving units in the dry storage area (15cm/6in) to allow for cleaning in the dry storage areas.
-Rice cooker was replaced and rice was greater than 60C.
-Bleach sanitizer spray bottle was at 200ppm.
-Scoops were properly stored in a sanitary manner at the time of inspection.
