Observation (CORRECTED DURING INSPECTION): Raw fish (packaged) observed to be stored above/near vegetable storage area in walk in cooler. Note: Raw animal products are generally stored on lower shelves located on left side of walk in cooler.
Corrective Action(s): Raw fish was relocated away from vegetable / ready-to-eat foods. Ensure that all raw foods such as raw animal products are not stored above or in close proximity to ready-to-eat foods (e.g. vegetables) to help prevent potential contamination of these foods.

Observation (CORRECTED DURING INSPECTION): Spray bottles containing bleach water sanitizer were unlabeled.
Spray bottle of glass cleaner stored in close proximity to food (lower shelf located on left side of large kitchen prep cooler).
Corrective Action(s): Spray bottles were properly labeled at time of inspection. Reminder to ensure all chemicals such as cleaners and sanitizers are properly labeled to prevent accidental misuse and potential contamination of food and/or food contact surfaces and equipment. Spray bottle of glass cleaner was relocated away from food storage area at time of inspection. Ensure that chemicals which may potentially contaminate food are stored in a designated area(s) away from food.

Walk in cooler at 3 degrees C.
Back area large prep cooler at 4 degrees C (above and below).
Back area small prep cooler at 1 degree C (above and below).
Front area prep cooler at 4 degrees C (above) and 3 degrees C (below).
Glass door cooler (back) at 2 degrees C.
Glass door cooler (front) at 2 degrees C.
Walk in freezer at -19 degrees C.
Hot holding internal food temperatures at 60 degrees C or more.
Hand washing sinks are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
High temperature dishwasher measured 72 degrees C at the utensil surface (maximum temperature achieved).
Bleach water sanitizer is available in buckets with wiping cloths and in spray bottles (front and back areas) at 100 to 200 ppm chlorine.*
Equipment and utensils observed to be in clean condition (including ice machine, meat slicer). Cleaning and sanitizing instructions posted near slicer.
Ice machine scoop properly stored in designated container outside of ice machine.
Temperature logs are well maintained.
No signs of pest activity noted at time of inspection.
*Note: Two spray bottles for front customer area (e.g. tables) were measured at slightly above 200 ppm chlorine. Solution was diluted at time of inspection to 100 to 200 ppm chlorine.
