101 - Plans/construction/alterations not in accordance with the Regulation [s. 3; s. 4]
Observation: Major construction occurring in the premises, this has been occurring for the last 2 weeks. The play place is being removed and a walk-in-freezer is being installed in the location. The existing walk-in-freezer is operating as a walk-in-cooler now, as the original walk-in-cooler was removed. No floor plans have been submitted to our office for approval, to ensure the proposed renovations meet health regulations.
Corrective Action(s): Immediately submit floor plans of the proposed renovations for review and approval. Failure to do so will result in the closure of the premises and/or suspension of construction until floor plans are provided and approved.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Dust is being generated from the construction area and travelling into food processing and storage areas. The dust will fall onto food and equipment, and contaminate it.
Corrective Action(s): The construction area must be separated/sealed off to prevent dust and other debris from entering food processing and storage areas. During the inspection, the construction staff started sealing off the area with poly-plasitc.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation (CORRECTED DURING INSPECTION): At time of inspection, the back door was propped open so construction staff could easily enter/exit the premises. The door is allowing flies to enter the food premises.
Corrective Action(s): Immediately close the door and it must remain closed at all times, or separate/seal the construction area off so flies are unable to enter food storage and processing areas. During the inspection, construction staff started installing poly-plastic to separate/seal the construction area from food storage & processing area.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Major renovations to the premises is occurring withouth the Health Authority's knowledge and or approval of the proposed floor plans. This is a requirement of the Food Premises Regulations, to ensure the proposed renovations meet health standards, and to ensure certain measures are being put in place to protect food, if construction is occurring during operating hours.
Corrective Action(s): Immediately forward a copy of the floor plans, for the proposed renovations to the premises, to our office for review and approval. Failure to do so, will result in closure of the premises and/or suspending construction until the floor plans are received and approved.

Comments

A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezers -16C or colder; hot holding units above 60C; thermometers present; and temps recorded daily. A reefer truck is storing frozen items, until the walk-in-freezer is installed. The truck is locked at all times, and foods are placed in the truck when a delivery occurs. Reefer truck was -25C.
- Electronic timer system is being used to monitor holding times of foods in the assembly areas, and for the cloth buckets to ensure the [Cl2] sanitizer is changed at a regular interval.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottles had 200ppm strength and [Cl2] in cloth buckets was 100ppm strength.
- All foods stored in food grade containers; covered; date coded; foods stored in groups; and foods stored 6" off the floor on racks, shelves, or platforms.
- No expired foods in use or for sale. FIFO rules are being followed.
- General sanitation level is adequate.
- A small problem with fruit/drain flies is present, but Management is aware and have informed their pest control company. Increased cleaning is being done to eliminate food and water sources. As well, a leaking pipe was found as the source and has been fixed. Continue to do detailed cleaning of all surfaces.....the undersides of cupboards, sinks and tables; exterior surfaces of waste and water pipes; and surfaces between and behind equipment, shelves, and tables.
