Routine inspection conducted. Facility is very well maintained and operated, and is in excellent sanitary condition. Factory produces only tortillas in warehouse, and the machine is comprised of the dough mixer, dough presser, hopper, conveyor system, oven, cooler conveyor, and sorter. Factory workers present to place dough into the mixer, and to package dough into bags for shipping.

The following observations were made:

1. Hygiene and Sanitizing
- Hand wash station near processing area and in restroom adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Dispenser releases quaternary ammonium compound (quats), staff periodically replenish spray bottle. Spray bottle on-site contains 200 ppm quats
- Management enforce a hair-net policy - good
- Washroom in sanitary condition
- Machine components are removed daily to be cleaned and sanitized with quats
- Larger machine components, mixer and presser are power-washed with hot water at the end of the day, and then sprayed down with sanitizer / air-dried in the morning before service begins

2. Storage / Pest Control
- Facility is well organized, no evidence of any leaking bags or flour
- Professional pest control company checks for rodents every 2 months
- No signs of recent pest activity at time of inspection - 4 mechanical traps were opened and inspected throughout facility
- Please email most recent pest control report to the Environmental Health Officer

3. Logging & Recommendations
- Please mark down the concentration of your sanitizer dispenser in the morning to ensure that it is working correctly
- As stated in previous report, you may wish to conduct regular bacterial swabbing to determine the efficacy of your sanitation plan
