Observation (CORRECTED DURING INSPECTION): - Container of colouring intended for use in food was labeled "for external use only"
- Another container of a product used for food was labeled "mostly used in textile industries"
Corrective Action(s): - Colouring was removed from the dry storage shelf, to be returned to supplier, as it may not be foodgrade.
- Immediately discontinue use of the product labeled for textile industries as it does not appear to be foodgrade.

206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): A small clamshell takeout container of paneer pakoras was measured at 49 degrees C. Pakoras stored in oven for undetermined length of time.
Corrective Action(s): Discarded. Ensure hot potentially hazardous food is maintained at 60 degrees C or more to limit the growth of potential pathogens.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): The following equipment had a build up of dried food debris and/or mildew:
- Blender, chopping/slicing machine, mounted vegetable dicer (for carrots), some utensils in bin (e.g. knife, scraper, tongs).
Corrective Action(s): Above noted items were being re-cleaned and sanitized during the inspection.
Ensure all equipment and utensils are thoroughly washed, rinsed, and sanitized after each use and before storing away to avoid potentially contaminating food.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Employee observed touching nose then continuing to work (food handler) without washing hands.
Another employee working at the cook line was observed touching apron and cloth hanging from waist without washing hands after.
Another employee was handling a phone then proceeded to continue working in the kitchen without washing hands.
Corrective Action(s): All employees washed hands properly at the direction of the EHO. Cloth removed from waist. Ensure all staff are following proper hand hygiene practices to limit potential contamination of food / surfaces.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): - Bleach water sanitizer in spray bottles (two) and one bucket measured over 200 ppm chlorine
- Cup immersed in chutney, spoon immersed in sweets (handle too) in walk-in cooler
- Open can of mango pulp in walk-in cooler
Corrective Action(s): - Bleach water sanitizer diluted to 100 to 200 ppm chlorine. Ensure sanitizer is maintained at safe and effective concentrations (e.g. 100 to 200 ppm chlorine) to avoid chemically contaminating surfaces.
- Cup and spoon removed. Ensure scoops are stored safely to protect food from potential contamination from hands.
- Can of mango pulp discarded. Ensure contents of cans are immediately transferred to a foodgrade container with a cover/lid if they are to be stored to avoid potential contamination from the can (metal leaching into food).

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings observed in the following areas:
- tables where dry storage bins are located (dishwashing area, tables behind prep cooler)
- near hot water tank
- on plastic cover located on a trolley, as well as the trolley itself
- dry storage area floors (near baseboards)
A dead mouse was observed in the trap located under the three compartment sink.
Corrective Action(s): Ensure all above-noted areas are thoroughly cleaned and sanitized today. Pest control service has not yet taken place; have premises serviced by pest control before August 9, 2024.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Holes/gaps observed in ceiling where pipes are located. In addition, holes/gaps observed in drywall in the mezannine area as well as the area located to the left of the mop sink.
Corrective Action(s): Ensure all holes and gaps are properly sealed to effectively prevent entry of pests at these points. Date to be corrected by: August 9, 2024. Monitor for new pest activity and locate/seal any additional holes/gaps, today and ongoing.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Plastic racks for dishwashing are being used for food. These are not intended to food contact surfaces. Hot food such as bhatturas were in contact with racks. Some evidence of melting of plastic observed.
Corrective Action(s): Immediately cease using dishwashing racks as food contact surfaces are they are not intended for this purpose and can contaminate food.

Follow up to Inspection Report # MBEK-D7GTWW.
Preparation cooler (main compartment; not upper insert area) at 4 degrees C.
Hand washing stations are accessible and supplied with hot and cold running water, liquid soap, and paper towels.
Plumber on site at time of inspection was in the process of servicing the dishwasher. Only single use utensils/containers to be used for dine-in in absence of properly functioning dishwasher. All equipment/utensils to be washed and sanitized manually via the three compartment sink in the interim.
Bleach water sanitizer in buckets available at 100 to 200 ppm chlorine available for sanitizing surfaces, with the exception of one sanitizer bucket that was too strong (refer to violation 209). Wiping cloths stored in buckets.
Chemicals labeled.
Three compartment sink method in use. Third compartment had sanitizer at 100 ppm chlorine.
No double stacking of containers observed.
Equipment such as beds and laundry line removed from upstairs area.
Manager (on site) has successfully completed a FOODSAFE Level 1 equivalent course (expires July 25, 2029).
Refer to previous routine inspection report for outstanding violations.
