[s. 14(2)] Observation: Front display cooler noted at 14 C ambient temp and 12.7 C internal temp of humus. Correction: Ensure all potentially hazardous foods (PHFs) are stored at or below 4 C. All PHFs stored above 4 C for more then 4 hours must be discarded and all foods stored in unit under 4 hours can be moved into another cooler under 4 C. Follow-up inspection to reports #ZDER-C4VUAX and ZDER-C5CTD4 -Back screen door installed -Display cooler noted at 4 C during inspection with smaller portions in inserts - re-supplied regularly from back cooler *Continue monitoring of cooler with thermometer *Correction Order still in place until next routine inspection - do not use unit if cooler is unable to maintain 4 C or less. -Door sweep purchased for front door - attempted to install once - require specific tools -Mouse droppings cleaned up under cooking equipment - continue to monitor for pest activity and clean up droppings as they appear if needed.
