302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) Chemical dishwasher had no detectable chlorine sanitizer on the dish surface during the final rinse. Staff was changing chlorine sanitizer pail at the time of inspection.
2) Deli slicer was found to have dried food debris on the blade.
Corrective Action(s): 1) Chemical dishwasher must be able to provide 50ppm chlorine to the dish surface during the final rinse to properly sanitize equipment and dishware. Dishwasher was primed and tested at 50ppm. Ensure dishwasher is tested daily to verify the chlorine concentration and sanitizer is primed after changing the sanitizer pail.
2) Ensure staff are instructed on proper cleaning and sanitizing of equipment after each use to prevent potential cross contamination.

Observation: Rodent was found in tin cat by the back door. No other evidence of pest infestation observed in the facility at the time of inspection. Facility is serviced by professional pest control operator on a weekly basis.
Corrective Action(s): Continue to use and follow the recommendations of professional pest control services. Continue to monitor and contact pest control services if increased activity is observed.

Comments

-Main walk-in cooler was at 4C.
-Alcohol walk-in cooler was at 3C.
-Prep line coolers were at 4C (top and bottom).
-Under grill cooler was at 4C.
-Sushi area under counter freezer was at -13C.
-Back upright freezers were at -18C and -13C (defrost).
-Hot holding was greater than 60C. Timer used to prompt staff to check hot foods every 90 minutes.
-Sushi rice had a pH of 4.0.
-Bar glasswasher had a final rinse of 12.5ppm iodine on the glass surface (minimum of 12.5ppm required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer dispenser was at 200ppm.
-Quats sanitizer spray bottles were labelled and available in food prep area and tested at 200ppm.
-Utensils stored on ice.
-Ice machine was found to be clean and sanitary. Ice scoop stored in a sanitary manner.
-Raw meats were stored separately from ready-to-eat foods.
-General sanitation good at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 valid until October 16, 2026.
