Corrective Action(s): > Remove droppings using a wet solution; do not vaccuum. Then clean and sanitize the above mentioned area with a bleach solution.

> Thoroughly clean and sanitize cabinent handles and food preparation areas. Maintaining a high level of sanitation will help to prevent the presence of pests such as rodents.

> High temperature dishwasher achieved final rinse temperature of 73.9C at the plate.
> 200ppm QUATS sanitizer solution available.
> Prep cooler: 1C
> Prep freezer drawers (x4): -8C
> Ice machine maintained in sanitary condition. Scoop stored in a clean container outside of the machine.
> Please ensure the juice press is cleaned and sanitized at least every 4 hours and as per manufacturer's instructions. Most parts can be taken apart and run through the dishwasher.
> Temperature logs are maintained, recorded every 3 hours.
