Comments

Handsinks were supplied with liquid soap, hot and cold running water, and paper towels.

Walk-in-coolers and other coolers were 4 degrees C (40 degrees F) or colder. One display cooler (only for muffins and bread during the lunch rush) was at 6.5 degrees C.
Walk-in-freezer, upright freezer, and ice cream freezer were -18 degrees C (0 degrees F) or colder.
Hot-held foods (soup sand gravy) was 60 degrees C (140 degrees F) or hotter.
Temperature records were being maintained.
Lights were encased in shatterproof covers in the walk-in-freezer and walk-in-cooler.
Leftovers are not used as the food sells out according to the Chef Instructor.

Dishwasher final rinse was 72.6 degrees C (71 degrees C or hotter) internally at the plate. The final rinse temperature could be monitored at the manifold as well.
200 ppm QUATS sanitizer was available from the dispenser. It was mentioned that new sanitizer is setup in each block.
Ice machine was in a sanitary condition.
Food storage areas (including drawers) were clean.
A pest control program was in place via CARE Pest & Wildfire Control.
Weatherstrips were available on the doors to close off the cafeteria from the rest of the school.

The following is to be done:
Please post a sign on the ice machine to remind staff and students to store the ice scoop in a clean covered container after each use.
