Observation:
Floor drain for the pipe beside the deep fryers has a large opening.
Corrective Action(s):
Install screen cover for this drain to prevent entry of pests into the kitchen.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
There is heavy grease build up in the fume hood ventilation above the frying station.
Walls, floor and pipe beside the frying station are also covered in grease.
Corrective Action(s):
Thoroughly clean back splash in the ventilation area as well as the back splash
for the fryers. Use heavy degreaser to remove oil/grease build up on the wall and
drain pipes beside the fryers.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation:
1. Potable water hose for the coffee machine was leaking.
2. Water was pooling inside the mop closet (missing tiles).
Corrective Action(s):
1. Ensure to address leak as water was pooling on the floor and causing slippery condition.
2. Mop closet to be repaired to avoid pooling water and mop hangers to be re-installed.
