Observation: Sanitation: Food/debris noted throughout facility - shelving, condensers, storage, etc.
Corrective Action(s): Increased cleaning of all display shelving, storage areas, marked down tables, etc, is to be conducted. All unused items are to be removed to reduce clutter and free up space. Storage areas - effort to be made to keep all items 6" off of flooring. (preventing rodent harborages)

Comments

- Temperature Control: No concerns noted. Gauges present. Monitoring required. Refrigeration units are to be maintained at or below 4 C. Freezers are to be maintained at or below - 18 C.
- Manual Dishwashing: 4 Step Dishwashing Method. Sign noted. Chlorine sanitizer on site. Concentration mixtures are to be used as per sign posting. Ensure all food contact surfaces are washed and sanitized after use or on a timely manner. (Ie: Every 4 hours - Cutting boards, knives, etc.) Procedures for cutting produce discussed. Cutting boards are to be kept in good repair. Repair and replace damaged items.
- Food Storage: Stock rotation discussed. Monitoring of expiration dates are required. Cut melon storage discussed. Continue efforts to store all items 6" off of floors.
- Sanitary Facilities: Ok
- Sanitation: Refer to Violation Notes. Facility/work areas are to be kept clean and organized at all times. Remove all unused/unwanted items to reduce clutter. Discounted storage shelving and display shelving are to be cleaned regularly.
- Structural: Refer to Violation Notes.
- Pest Control: Previously discussed. Increased sanitation and removal of all unwanted items is part of an effective rodent control program. Monitoring for insect/rodent activity is required to be conducted daily. An active pest control program is required.
- Garbage, Recycling and Composting Storage: All items are to be stored in covered, rodent proof containers. Garbage/food debris is to be removed in a timely manner.
