Observation: Items in the walk-in cooler were uncovered: cut tomatoes, sauces, and some skewers on the cooling rack.
Corrective Action(s): Aforementioned items were covered at time of inspection. Ensure that you cover all items after the are cooled to protect from contamination.

304 - Premises not free of pests [s. 26(a)]
Observation: 3 deceased mice present in one trap inside the general storage area.
Corrective Action(s): Pest control technician was called at time of inspection. Mice were emptied from the trap and trap was reset. Operator instructed by EHO to saturate all rodent droppings with 1 part bleach, 9 parts water and saturate for approximately 10-15 minutes before removal.

Pest control technician states that a recent hole in the dry storage area was plugged. Continue to monitor for any entranceways and seal any remaining holes as necessary. NOTE: The area behind the dishwasher contains some holes that could eventaully lead to pest entry. Ensure that you continue to monitor the area and re-seal any holes or entry poitns as needed.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Ventilation canopy saturated with grease, as well as crevices between equipment.
Corrective Action(s): Thoroughly clean the ventilation canopy and ensure that the slats get cleaned adequately to avoid grime buildup. Also ensure that you clean in between the equipment, as there is accumulating grime there as well.

- Low-temperature dishwasher sanitizes at 50 ppm at final rinse cycle
- Bleach sanitizing pail at 200 ppm
- Utensils, knives, cutting boards maintained in good condition

- General attention to covering food products needs to improve - see violation code above

- Please inform your pest control company to reset all traps as part of integrated pest management program
