Observation (CORRECTED DURING INSPECTION): Found sandwich bagettes, pizza breads, and pepperoni sticks wrapped in bread being stored at room temperature (21C). Staff indicated that the items are kept at room temperature until the end of the day and then placed in the fridge for overnight storage, and discarded at the end of the next day if not sold. This is unsafe as the food items contain protein and will allow bacteria to grow in, and could make people sick.
Corrective Action(s): Immediately develop a formal process for holding potentially hazardous foods at room temperature, and train all staff on this process. The process shall include: holding food for ONLY 2 hours and then discarding it; and a method with which staff know when 2 hours has elapased (timers, writing time on food products, recording sheet).

Observation: The wood cabinets are chipped, cracked and rought. The surface is not smooth, sealed, or cleanable. This will attract pests. This was mentioned in the last inspection, and it hasn't been corrected.
Corrective Action(s): Repair/replace the wood on the cabinets so it is of a material that is smooth, sealed, durable, and cleanable.

Comments

A routine inspection was completed:
- Coolers 4C or colder; and hot holding unit above 60C.
- Hand sinks stocked with liquid soap, single-use cloth towels, and running hot and cold water.
- High temperature dishwasher had a rinse cycle temp of 77.4C at the plate's surface, as per max/min thermometers.
- Quats sanitizer in spray bottle had strength of 200ppm.
- Foods stored in food grade containers; covered; labeled; date coded; foods stored in groups; and foods stored 6" off the floor on racks or shelves.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good.
- No signs of pests.
- Valid FoodSafe certified staff, or a recognized equivalent certificate, present.
**Ensure the bucket under the cappuccino machine is emptied at the end of every night to eliminate a water source for pests.**
