Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: No chlorine sanitizer observed during the final rinse cycle of the commerical low temperature chemical dishwasher after several consecutive runs. Operator indicates that they do not use the dishwasher often as they prefer using 3 compartment sink for manual dishwashing.
Correction: Service/repair dishwasher. Low tempertature chemical dishwasher must reach a minimum 50 ppm chlorine to ensure adequate sanitization of dishes. Discontinue use of this dishwasher, all utensils, tools and equipment are to be washed manually using the 3 sink method.

Follow up inspection to report #SCHO-BYXUR4:
- Owner informed EHO via call/email that there are plans to remove the low temperature dishwasher from facility. During inspection, the dishwasher has not been removed from facility yet.
- Sign posted on the dishwashing stating "Out of Service, Do Not Use"
- 3 compartment sink available for manual dishwashing
- Staff members were able to explain & demonstrate how to manual dish wash using the 3 compartment method: 1) Wash 2) Rinse 3) Sanitize 4) Air Dry
- Quats sanitizer dispensing at 200 ppm
