-Walk-in cooler was at 4C.
-Prep cooler was at 4C (top and bottom).
-Upright cooler was at 4C.
-Front bar coolers (2) were at 4C.
-Freezer unit was at -10C.
-Hot holding was greater than 60C.
-Pork was cooked to greater than 71C.
-Gravy/sauces made the previous day were rapidly cooled and were at 4C. Facility has a mixing wand to rapidly cool foods.
-High temperature dishwasher had a final rinse temperature of 72C on the dish surface (minimum of 71C required for proper sanitizing).
-Bleach sanitizer spray bottles labelled and tested at 200ppm.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Manual slicers were found to be clean and sanitary.
-General food storage practices good at the time of inspection. Raw meats stored below and separately from ready-to-eat foods. Foods properly covered and stored off the ground.
-General sanitation good at the time of inspection.
-Facility is serviced by a professional pest control operator on a monthly basis. No signs of pests noted at the time inspection.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 refresher taken January 05, 2022. FOODSAFE Level 1 valid until January 05, 2027.
