As discussed with the district manager on site, the D10 sanitizer chemical was reviews and is approved for use a food contact surface sanitizer when used at a concentration of 200 ppm QUATS, no rinse is required at this concentration.
New prep cooler installed to replace previous cooler across cooking line and is now at 3.9 deg C-- great
Staff member on site has valid FoodSafe level 1 certificate and showed verification of this.
