306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Food debris (packages of egg bites) and plastic food wraps found under the front service counters, especially along the back walls of these areas. This will attract pests.
Corrective Action(s): Immediately weep the floor under the front service counters to remove all food debris and packaging. Increase the cleaning frequency of this area to remove all food debris and to prevent pest concerns. Management shall inspect (on their knees) every night to ensure all debris has been cleaned up.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The u/c cooler storing cold coffee, and carafes of dairy products and whip cream had a broken gasket that was not sealed to the door. The door was not able to close tightly and the cold air was constantly leaking out. The air temperature was between 9C-14C in the cooler. At this temperature, perishable items will expire and bacteria will grow in it.
Corrective Action(s): Immediately remove all perishable items from the cooler and store in a working cooler. Contact a repair company to fix the gasket so it is secured and sealed to the door, and the door can properly close and seal cold air in. Only store non-perishable food items in the cooler (place a sign on the cooler door stating this) until the gasket is fixed and the cooler can maintain 4C or colder at all times.

A routine inspection was completed:
- Coolers 4C or colder (other than the mentioned u/c cooler); freezers -21C or colder; and thermometers present.
- High temperature dishwasher had a rinse cycle temperature of 71.4C at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels and running hot and cold water.
- Quats sanitizer in spray bottles and cloth buckets had strenth of 200ppm.
- Valid FoodSafe certified, or equivalent certificate, staff present.
- All foods stored 6" off the floor in food grade containers; covered; labelled; date coded; and stored in groups.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. Improvement needed in the mentioned area.
- No signs of pests.
- Surfaces are in good working order, durable, sealed, and cleanable.
