Observation: The employee that has FS level 1 certification ended her shift during the inspection and none of the other staff members, including the shift supervisor, had FS level 1 certification. One of the staff on duty mentioned that they have been told to sign up for the course in shifts.
Corrective Action(s): Ensure that at least one employee on every shift has FS level 1 certification. NOTE: CERTIFICATES ISSUED PRIOR TO 2013 WILL EXPIRE ON JULY 29, 2018. STAFF NEED TO GET RE-CERTIFIED AS REQUIRED.

-Freezers are below -18 degC
-Dishwasher rinse is 77 degC at plate level
-Hotholding unit in the front service area was at 63 degC
-Hand sinks are fully equipped
-Sauces for the wings are date labeled. Metal bowls are washed and sanitized every 2 hours if used.
-200ppm Quats sanitizer is available for use. USE TIMERS AS DISCUSSED.
-Temperature log is being maintained
-Abell pest control company is still on contract. No concerns noted. No droppings observed.
