Observation: 1) Equipment/utensils/food contact surfaces not properly washed and sanitized. Shaved ice utensils not sanitized after washing with regular dish detergent.
2) Spray bottles do not contain appropriate concentration of sanitizer.
Correction: 1) Use two compartment sink for wash and rinse steps then place into mechanical dishwasher for sanitizing step or second sink for sanitizing with bleach or quats.
2) Refill with either chlorine (bleach) at 100ppm-200ppm or Quats at 200ppm
