Observation (CORRECTED DURING INSPECTION): Several vacuum packaged foods were thawing in cooler with packaging intact. Foods were still frozen.
Corrective Action(s): Open up the vacuum packaging to allow air in. This is to prevent botulism as the bacteria that causes this disease is capable of growing in environments with no oxygen. Date to be corrected by: Immediately

- High temperature dishwasher in use. Final rinse temperature reached 77.7C at the plate level
- Two compartment sink available for manual dishwashing
- 200 ppm Quat sanitizer available in spray bottles
- Ice machine is well-maintained
- No signs of pests observed during inspection
