Observation (CORRECTED DURING INSPECTION): Staff observed wearing the same rubber gloves to clean equipment and handle food in that order.
Corrective Action(s): Hands are to be cleaned between tasks and gloves are to be changed. Acquire powder free nitrile disposable gloves.

Comments

All fridges in use are 4 degrees Celsius or colder.
All freezers are -18 degrees Celsius or colder.
Ensure temperatures are monitored and recorded along with dishwasher and sanitizer.
Sanitizer measured 200 PPM Quat.
Dishwasher final rinse reached 76 degrees Celsius at the plate surface.
Liquid soap and paper towel at sink. Place paper towel in dispenser.
Note: Cold salads are currently being held cold with a ice pack underneath for half hour lunch service and then placed back in fridge for following day. . This is not adequate for cold holding. Operator has decided to discard all left overs after lunch service.
