Observation: Old rodent droppings observed in the following areas:
1. Underneath shelving units against the walls in both dry storage areas
2. Behind and on the sides of the desk in the office
3. Behind and on the sides of the laundry machine
4. Underneath the shelving unit across from the laundry room
No signs of recent pest activity observed.
Corrective Action(s): Remove all droppings. Clean and sanitize all affected areas. Date to be corrected by: Immediately

Observation: Display cooler in the middle is maintaining ambient temperatures of 20C. Bottled drinks (water, juice, milk) are stored here and have been placed in this cooler at the start of inspection.
Corrective Action(s): Repair cooler so it can maintain ambient temperatures of 4C. Do not store perishable food in this cooler until it has been repaired. Date to be corrected by: October 2, 2018

- Coolers (walk-in, undercounter, left side display) at < or = 4C
- Freezers (walk-in, stand-up) at < or = -18C
- Hot holding units (soup, steam table) at > or = 60C
- High temperature dishwasher in use. Final rinse temperature reached 79.5C (Minimum 71C) at the plate level.
- Three compartment sink available for manual dishwashing
- Quat sanitizer available from dispenser
- Ice machine is well-maintained. Ice scoop is stored in a sanitary manner.

*Display cooler on right side is maintaining temperatures of 5.9C. Perishable foods are not stored here. If perishable foods are to be stored in this cooler in the future, ensure that it is able to maintain 4C or less.
