Observation (CORRECTED DURING INSPECTION): Potato press was found to have dried food debris on the blade and hand piece.
Corrective Action(s): Ensure equipment is properly disassembled for cleaning and sanitizing after each use to prevent potential cross contamination. Potato press was washed and sanitized at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Front sanitizer pail was too strong - bleached out test strip.
Corrective Action(s): Bleach concentrations in excess of 400ppm are not considered food grade and may contaminate foods or food contact surfaces. To prepare 100ppm to 200ppm bleach add 1 tablespoon of bleach to 4L of water.

Comments

-Follow-up inspection to April 03, 2023.
-High temperature dishwasher had a final rinse of 72C on the dish surface on consecutive cycles (minimum of 71C required for sanitizing). Dishwasher no longer requires hours of warming in order to achieve sanitizing temperatures.
-Did not observe foods stored in open food containers at the time of inspection.
-Did not observe cardboard lining surfaces at the time of inspection.
-Sanitizer pails were properly labelled at the time of inspection. Containers need to be relabelled as needed.
-Light cover has been replaced in the kitchen.
-Did not observe used plastic bags in the kitchen at the time of inspection.
