Observation (CORRECTED DURING INSPECTION): Rice was prepared earlier in the day and was left at room temperature for over 2 hours. Operator discarded during inspection.
Corrective Action(s): Ensure to either cool to 4C or hold at 60C or higher within 2 hours of preparing rice. Leaving rice at room temperature promotes bacterial growth.

- High temperature dishwasher reached 71C or higher at plate surface
- 200ppm chlorine available for sanitizing food surfaces
- Brown chest freezer and white chest freezer was -18C or lower
- Upright freezer was -18C or lower
- 2 x cooler/freezer were 4C/-18C or lower
- Cooler near sushi bar and in the storage area were 4C or less
- Sushi bar display was 4C or less
- Miso soup hot holding was 60C or greater
- Rice hot holding was 60C or greater
- Sushi rice kept used for the day and discarded after
- Rice scoops stored sanitarily
- No evidence of pest activity during inspection
- General sanitation and cleanliness was adequate
