Observation (CORRECTED DURING INSPECTION): Noted time on cheese charts indicating 11am. Time of inspection 3pm. Unrefrigerated cheese discarded at time of inspection.
Corrective Action(s): Ensure staff use cheese log properly and update the time cheese needs to be discarded at.

Observation (CORRECTED DURING INSPECTION): A) Noted pile of clean plates on counter had food debris and stains on them.
B) Noted pile of clean plates is located on counter between raw meat breading station and hand wash station
Corrective Action(s): A) Once broken dishwasher has been repaired/replaced have dirty dishes put through the dishwasher.
B) Relocate pile of clean plates or install splashguards to prevent cross contamination of the plates with raw chicken or splashing water from the hand sink

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: High temperature dishwasher achieved 66.6C max. Closure order issued.
Corrective Action(s): Have dishwasher repaired/replaced as needed to ensure it sanitizes properly. High temperature dishwasher should achieve 71C at plate level.

Observation: A) Operator does not have proper lid set up for the raw chicken/sauce station.
B) Scoop for ice was buried under the ice in the ice maker.
Corrective Action(s): A) Operator to ensure the ready to eat foods (ie. sauces) are protected from the raw chicken.
B) Ensure scoop for ice is not in contact with the ice (ie. use the scoop holder in the ice machine to hold the scoop or store the scoop in a container outside of the ice).

Observation: A) Spray nozzle at two compartment sink had towel wrapped around it.
B) Knob for hot holding of gravy lid has come off

Hand wash stations in the front service area x2 and washrooms were fully equipped with soap, paper towel, hot and cold running water.
All coolers 4⁰C or less (walk in, under counter, prep cooler...etc).
Walk in freezer -19C and ice cream freezer -14C
All hot holding higher than 60⁰C (fries, mushrooms, gravy, chili)
Back door was closed at time of inspection. No obvious signs of pest activity noted at time of inspection.
Ice machine appeared clean at time of inspection.
Scoop for ice cream stored in dipper well with cold running water.
Quat sanitizer in front service area 200ppm.
