Observation (CORRECTED DURING INSPECTION): The handwashing sink in the waitress area and adjacent to the walk-in-cooler had buckets and ice scoops stored in the sink basin. Staff are not able to wash their hands as the sink is being blocked.
Corrective Action(s): Immediately remove the items in the mentioned sink basins, and educate staff to not place or block items in the handwashing sinks. During the inspection, items were removed from the sink basin.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1) Found containers of food, in the walk-in-cooler (been sprouts, soup) and prep/assembly cooler in the cookline, not covered. Germs or foreign objects could fall into the food, contaminating it.
2) Foods and clean food equipment (colindars & bowls) are being stored on top of the grease interceptors. Grease interceptors are "dirty" as it stores oily water from the dishwasher and sinks. If the grease interceptors leak/break, the contents will contaminate the food and food equipment.
3) Clean cutting boards and food container & lids are being stored on the floor. These items can become contaminated by staff walking by or dirty water falling on it.
Corrective Action(s): 1) Immediately cover all food containers with tight fitting lids, saran wrap or aluminum foil. During the inspection, staff covered all food containers.
2) Relocate the food and food equipment so it is stored in a clean, dry area that is 6" off the floor. Only store cleaning chemicals, pesticides, and non-food items on top of grease interceptors.

Observation: 1) The interior surfaces of the ice machine has mildew on it. The mildew will touch the ice and contaminate it.
2) The floor under and behind the ice machine has accumulated debris and food. This will attract pests.
3) The wire racks storing spices (beside the cookline) and the wire racks adjacent to the walk-in-cooler have accumulated food and grease on them. This will attract pests.
Corrective Action(s): 1) Immediately clean and sanitize the interior surfaces of the ice machine. This should be done at least once a week

Observation: Cardboard and aluminum foil was lining shelves and had accumulated food and grease on them. Staff indicated that these materials are changed every 2nd day. These materials are not durable, sealed or cleanable and will attract pests.
Corrective Action(s): The cardboard and aluminum foil MUST be thrown away every night, and new ones installed in the morning. The shelves and surfaces under the cardboard and aluminum foil must be washed every night.

Comments

A routine inspection was completed, the following observations were made:
- Cooler 4C or colder; freezers -18C or colder; hot holding units 60C or hotter; and thermometers present.
- Low temperature dishwashers in the kitchen and bar had [Cl2] between 50-100ppm during the rinse cycle. During the inspection, the bar dishwasher had empty soap, sanitizer & rinse aid bottles. These were replaced with full ones, but staff unsure how long they had been empty. Ensure staff check everyday, that the chemical bottles are full.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottles and cloth buckets had [Cl2] of 200ppm.
- Majority of food stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins stored separate or below RTE foods; and foods stored 6" off the floor.
- No expired foods in use. FIFO rules being followed.
- Found large amount of minced, raw garlic being stored at room temperature. This food items MUST be stored in the cooler at all times, or only leave out enough to be used in 2 hours.
- General sanitation level is good. No signs of pests.
- FoodSafe certified staff present.
- All items from the previous inspection have been corrected.
