Observation (CORRECTED DURING INSPECTION): A bag of raw meat was observed at the thawing in the 2 compartment sink at room temperature. The surface of the meat was measured at 20C. Staff stated the meat was thawing in the walk-in cooler last night and it was taken out an hour ago to be thawed under room temperature.
Corrective Action(s): Do not thaw raw meat at room temperature. Raw meat must be thawed in a functional cooler or under cold running water. Operator immersed the meat in cold running water.

Observation (CORRECTED DURING INSPECTION): Two scoops used for cooked rice stored in inserts immersed ambient temperature water. Water temperature measured at 23C.
Corrective Action(s): Rice scoops must be stored in ice water or cleaned and sanitized after each use. This is to prevent the growth of potneital pathogens that is naturally occuring in cooked rice.

Observation: Paper towel not available at the hand washing station located near the deep fryer.
Corrective Action(s): A new roll of paper towel was installed into the dispenser.

Observation: Food debris and grease build up observed on the floor around the deep fryer.

Routine inspection:
- Coolers (sandwich, walk-in, front beverage) maintained at 4C or less. Under the counter cooler and one sandwich cooler not in use.
- Walk-in freezer functional
- Hot food hot held above 60C.
- New hot holding unit at the serving area maintaining the temperature properly.
- Other hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- High temperature dishwasher registered 71.3C at the plate level.
- 200 ppm bleach sanitizer available in spray bottles.
- Ice machine not in use.
- Food products stored off the ground.
- Temperature records not available for the sandwich cooler and walk-in cooler. Ensure they are maintained.
- No pest activities observed at the time of the inspection.
