302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: The low temperature dishwasher has [Cl2] of 0ppm during the rinse cycle, and no soap during the wash cycle as the buckets were empty. A new bucket of dishwashing soap was installed, but there is no extra bucket of sanitizer on-site. Dishes are not being sanitized in the dishwasher.
Corrective Action(s): Immediately purchase more sanitizer for the dishwasher. Until the sanitizer arrives, dishes shall be manually sanitized by soaking sanitizer (add 2 Tbsp bleach to 8 Litres of hot water) in the 2-comp dishwashing sink, OR stop using the dishwasher and stack up the dirty dishes until dishwasher sanitizer arrives. During the inspection, the owner stated that he will purchase a bucket of sanitizer and bring it to the premises within 1 hour.

Observation: The soap dispenser is broken at the handwashing sink in the front buffet service area. Staff are unable to properly wash their hands prior to dispensing food. At time of inspection, the buffet was not in operation.
Corrective Action(s): Immediately replace the broken soap dispenser with a working one and mount it on the wall, or place a hand pump soap dispenser at the hand sink.

Observation: Premises has not paid the yearly health permit fees of $150, the premises is operating without a valid health permit and decal.
Corrective Action(s): Immediately pay the yearly permit fees using a credit card via online payment or contact the Billing Dept..
Failure to pay the fees in full will result in the closure of the premises until it has been paid.

Observation: The plexiglass divider still has the protective plastic cover on it. This plastic is NOT cleanable and has accumulated grease on it, this will attract pests.
Corrective Action(s): Immediately peel off the protective plastic cover on both sides of the plexiglass, so it can be cleaned and sanitized correctly.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -19C or colder; hot holding units above 60C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in cloth buckets had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; date coded; labeled; foods stored in groups with raw proteins separate or below RTE foods; and food stored 6" off the floor on racks, shelves or platforms.
- General sanitation level is satisfactory. No signs of pests.
- Valid, FoodSafe certified staff present.
- Floor has been sealed and is durable, smooth, level, and cleanable.
- A new door handle on the staff washroom has been installed.
- The faucet in the front service buffet area has been sealed and secured to the counter top.
- A plexiglass barriers has been installed on the back of the shelf which stored clean dishes. The black cloth/drape has been removed.
- Opening observed in the wall, opposite of the mop sink. The owner explained that they had to open up the wall so the floor drain was accessible. At this time, this is not causing or creating an area of pest harborage or entry. However, if it does, the opening in the wall will be required to be closed and the wall will need to be made durable, smooth, level, sealed, cleanable, and exclude pests.

**A follow-up inspection will be completed tomorrow to ensure all violations have been corrected. Failure to have the dishwasher rinse cycle achieving sanitization, will result in the closure of the premises until it can.**
