Observation (CORRECTED DURING INSPECTION): Two compartment sink (one which is designated for hand washing) is being used for prepping chicken and the other sink is being used for thawing scallops.
Owner is allowing handwashing to be done in the staff washroom at the back, too far from food preparation.
Hand sinks were supplied at the time of inspection.
Corrective Action(s): Supply both hand sinks (front and main) with liquid soap and paper towel in dispensers.
Allow hand washing at all time especially during preparation and cooking.
Avoid using gloves for whole shift.

Observation: Back door has small amount of light showing through.
Small hole in wall and concrete next to back door.
Small amount of what looks like rodent droppings at the back and near water heater, no sure signs of rodents.
Corrective Action(s): Block and seal all holes with sealant that prevents rodents or steel wool (available on site).
Invest in pest control contractor to come on a regular basis.
Install traps at the back near the washrooms.

Dining in has not resumed, take out only at this time.
Preparation tables were being used at the time of inspection for chicken cutting.
Other prep tables appear to be clean.

Freezers <-18C.
Cooling on trays, portioned.
Thawing in bucket in sink under running, cold water, great job.
Dishwasher 100ppm chlorine.
Chlorine sanitizer 100ppm.
Hot holding rice >60C.
Front prep area appears to be clean.
Items in coolers: majority of items are covered.
Raw, ground meat in bucket could be stored in a separate area away from noodles and below ready to eat food items.
Organize cooler to prevent contamination.
