Observation (CORRECTED DURING INSPECTION): Large bucket of food was cooling in the walk-in cooler
Corrective Action(s): Food must be cooled from 60C to 20C within 2 hours and 20C to 4C within 4 hours. This cannot occur if food is stored in large volumes (ie. in large buckets). Cooling can be done properly by doing one of the following:
1. Portion food into shallow pans/bins to allow for faster cooling
2. Use ice wands to help cool buckets of food quicker

Observation (CORRECTED DURING INSPECTION): Bucket of packaged frozen shrimp was thawing in room temperature.
Corrective Action(s): Ensure the thawing process occurs under one of the following conditions:
1. In a cooler < or = 4C
2. Under cold running water
3. As part of cooking step if portions are small

- Coolers < or = 4C

- Hot holding units > or = 60C
- Low temperature dishwasher in use. Residual chlorine concentration measured at 50 ppm.
- Glasswasher in use. Residual chlorine concentration measured at 50 ppm.
- Bleach sanitizer available at 100 ppm in buckets with wiping cloths
- Ice machine is clean. Ice scoop is stored outside of machine and separate from ice.

*Minor ant activity observed. Pest control services available and will be arranged. Clean the floors with warm water and soap to remove the chemical trails left by the ants.
