Observation (CORRECTED DURING INSPECTION): Inside prep line cooler has some water pooing and spills of food debris. Also, in the display salad cooler, vent has some debris build up.
Corrective Action(s): Clean inside the equipment and sanitize thoroughly.

Comments

Hand wash stations stocked with liquid soap and paper towels.
Sanitizer (quats) measured 200 ppm (bucket/3-comp sink).
Walk-in cooler was at or below 4 deg C.
All food items were stored off the floor (at least 6 inches).
Hot holding:
- rice & couscous = 72 deg C
- beans & soups = 74 deg C
Cold holding:
- salads display was at or below 4 deg C
- line coolers were at or below 4 deg C
Temperature log was available and up to date.
No signs of pests noted at time of inspection. Ensure there is pest control monitoring in place.
General sanitation was satisfactory at time of visit.
Washrooms were maintained in sanitary condition.
