Observation (CORRECTED DURING INSPECTION): Test strips did not detect any concentration of QUATS sanitizer in QUATSAN solution used at facility.
**Corrected during inspection** Operator to switch to bleach sanitizer (1/2 tsp bleach / 1L water). Operator to follow-up with chemical supplier to obtain test strips to ensure sanitizer is at adequate concentration.

Observation: 1. Handwashing (prep area) located too close to ingredient bin and preparation table. Potential contamination from splashing water when staff washes hands. Water pressure also very high.
2. Scoops observed to be stored in ingredient bins. This can potentially contaminate foods when staff reaches to pick up scoop or if scoop handles fall into ingredients. Scoops also may be missed during routine cleaning if stored in ingredient bins.
3. Fly trap observed to be above handwashing station (prep area) and wheeled sheet pan rack. Rack observed to be holding food.
Corrective Action(s): 1. Relocate nearest ingredient bin and stainless steel table to be farther from handwashing station.

2. Store scoops outside of bin in a clean container. Both scoop and container is to be cleaned and sanitized regularly.

Routine inspection conducted.

Temperatures:
Upright display cooler (New air): 3.2°C
Display cooler (Efi): 4.9°C
3 door upright cooler (McCall): 6.7°C
Unit heavily used as staff was preparing cakes during inspection. Monitor to ensure unit can maintain temperatures of 4°C or less.
3 door upright cooler (QBD): 1.6°C
2 door undercounter cooler (Masterbilt): -7.1°C
3 door undercounter cooler (True refrigerator): 2.5°C
Walk-in freezer: -20.0°C

Sanitation:
Most handwashing stations equipped with hot/cold running water, liquid soap and paper towels.
High temperature dishwasher measured 79.6°C at time of inspection.
3 compartment sink on site.
SanQUAT 200ppm available from chemical supplier, however test strips did not detect QUATS.
Facility to switch to bleach (1/2 tsp household unscented bleach / 1L water) until test strips can be obtained from supplier to ensure proper QUATS concentration.

Storage:
All food items were stored at least 6" off the floor.
All products were either in original packaging or covered inside coolers.
Storage area was well-organized.
Chemicals and cleaners were stored separate from food preparation areas.
