Pastry/baked good side:
Hand sink provided with liquid soap and paper towels.
Quats dispensed at 200ppm at the utility sink.
Raw ingredients stored on shelves. Dry storage area clean and organized.
All large equipment is cleaned in place.
Walk in cooler at or below 4 degrees C.
Walk in freezer at or below -18 degrees C.
Temperature monitoring records maintained and available for review.
Both packing lines are equipped with metal detectors.

Washing area:
Large sink available for prewashing.
High temperature dishwasher is checked for final rinse temperature twice a day using thermolabels. October 5, 2023 thermolabel showed at or above 71 degrees C at the plate level.

Sandwich preparation side:
Hand sink provided with liquid soap and paper towels.
200ppm quats dispensed from the chemical dispensing station at the 2 compartment sink.
Sandwich assembly room chilled to 4-5 degrees C.
