Observation (CORRECTED DURING INSPECTION): Discovered that dish detergent bucket for dishwasher was empty. Feed line was also empty.
Corrective Action(s): Ensure that there is a continuous supply of soap to dishwasher. This should be checked daily. Glasses were pulled from front and hand washed in sink with liquid soap until a replacement bucket could be brought onsite. They were then sanitized in dishwasher.

Dishwasher final rinse reached 71 degrees C at the plate surface.
Fridge with charcuterie plates and cheese was maintaining them at 4 degrees C.
Ensure temperatures of fridges are being monitored and recorded daily.
