Observation: The organic waste disposal bin was stored inside the walk in cooler. The operator stated that the waste bin is emptied once a week and stored in the walk in cooler until it is emptied out. This is an unacceptable practice.
Corrective Action(s): Discontinue this practice immediately. Store the organic waste bin in the back of the kitchen away from any food items. Empty the contents every night or as often as needed.

Observation: Surface sanitizer spray bottles were not labeled.

Comments

- General sanitation is excellent.
- All handwashing stations (front/back) stocked with hot/cold running water, soap, and paper towels. Ensure to provide wastebins near the handwashing station.
- All coolers (display, walk in, upright) at < or = to 4C.
- Upright freezer at < or = to -18C.
- All refrigeration units equipped with working thermometers.
- Hot holding unit at 60C.
- Daily temperature logs were not available on site. Please provide a copy of the daily temperature logs to the health inspector via email. This was a condition on your health approval. Keep logs on site for review by the health inspector.
- Three compartment sink available for manual dishwashing. Sanitizer available at 100ppm bleach solution with drain plug to fill the sanitizing compartment of the sink. Please follow the proper manual dishwashing procedures.
- Surface sanitizer available in spray bottles at 100ppm chlorine solution. Ensure to provide surface sanitizer at each station (ie serving area, main prep area).
- Dry storage area for equipment (ie gloves, wiping cloths) is separate, adequate wire racks available.
- No signs of pest activity at the time of the inspection.
- Nitrile gloves (latex free) being used.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.
