Observation:
1) The the surfaces of the ice making machine components have accumulated mould on them. The mould could drop into the ice and contaminate it.
2) The fire extinguisher and surfaces under the handwashing sink, in the sushi making area, have accumulated sticky sauce on them. This will attract flies.
Corrective Action(s):
1) Wash and sanitize these surfaces of the ice making machine. Turn the ice machine off; empty the ice out of the machin; wash with hot water & soap; and then sanitize with bleach and water. Rinse and then turn ice machine back on. Ensure this is done on a monthly basis.
2) Wash the fire extinguisher and surfaces under the handwashing sink every night to remove the sticky sauce. Change the cardboard every night, so the sticky sauce doesn't attact flies.

Comments

A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezers -29C or colder; hot holding above 60C; and thermometers present.
- High temperature dishwasher has a rinse cycle temperature of 79.2C at the plate's surface as per max/min thermometer.
- Bleach sanitizer in cloth bucket and spray bottles had [Cl2] of 200ppm.
- Hand washing sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; date coded; foods stored in groups with raw proteins separate or below RTE foods; and foods stored 6" off the floor on racks, shelves or platforms.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good.
- Exhaust canopy and filters cleaned every week by staff. These were professionally cleaned in August 2023, and next professional cleaning service due in March 2024.
- No signs of pests.
- Valid FoodSafe Level 1 certificate, or an equivalent course, possessed by staff.
- Floor under the wire rack, beside the walk-in-cooler, is clean and has been kept clean since the previous inspection.
- A new container and lid for the storage of flour is in use. The broken lid has been discarded and replaced.
