Observation: - Unable to verify if dishwasher is able to meet required rinse temperature at time of the inspection
- Dishwasher was heating (continuously running) for 1 hour and had not met required wash temp (150F) on plate for cycle including high temperature rinse to run. Manager reported dishwasher does normally take a long period of time to heat and once heated, will reach required rinse temperature.
Note: Dishes/utensils/cups used for customers are single service only. Only limited items which are used for preparing foods and drinks require washing and sanitizing.
Corrective Action(s): - Have dishwasher serviced, repaired or replaced so that dishwasher is in operating according to specifications. To be corrected by: 15-June-2022
- Until dishwasher is in good working order and meeting required wash and rinse temperatures, manually wash and sanitize dishes in warwashing sink. Manager knowledgeable about manual warewashing procedures and sign is posted at warewashing sink. Bleach present for sanitizing step and test strips present for checking concentration.

Comments

- Premises serves beverages and limited food items. Foods items are frozen (pre-made) and cooked/re-heated for service.
- Beverages and foods are currently served in single use containers
- Handsink in front bar area and back kitchen area were supplied with hot and cold running water, liquid soap and paper towel
- Kitchen and bar area maintained in sanitary condition.
- No signs of pest activity noted at time of inspection. Glue boards present for monitoring purposes.
- Ice machine maintained in sanitary condition. Manager reported it is emptied, cleaned and sanitized every two weeks.
- Bleach sanitizer solution present with wiping cloth stored in solution. Concentration measured 200ppm chlorine. Test strips present to verify concentration.
- Coolers were operating at 4C or colder:
- Single door reach in cooler 2C
- Bar cooler 1C
- Chest freezer -23C
- Thermometers present in coolers and freezer.
- Temperature of coolers and freezers are checked and recorded daily. Dishwasher rinse temperature is checked prior to use with external gauge.
- High temperature dishwasher heating . New commercial dishwasher has been ordered.
- Manager and 2 additional staff have valid foodsafe level 1 certificate to ensure foodsafe requirement is met. Copies of certificates present on-site.
- Health permit posted with valid decal affixed.
