Observation (CORRECTED DURING INSPECTION): "Olives stuffed with feta cheese" was in olive bar at room temperature (~20C). Olives were placed in the olive bar approximately 2-3 hours ago. Packaging states that it is to be kept refrigerated.
Corrective Action(s): "Olives stuffed with feta cheese" was immediately placed back into the walk-in cooler. These olives must be temperature controlled (e.g. displayed in a refrigerated case) or time controlled. Ensure that any items with potentially hazardous ingredients (e.g. cheese) are kept refrigerated. Operations manager to provide Environmental Health Officer with an update regarding the storage of the "Olives stuffed with feta cheese".

Observation: 1. Cardboard used to line shelving underneath olive bar contains deposited oil and debris.
2. Shelves in back kitchen area are starting to reveal some exposed wood.
Corrective Action(s): Remove the cardboard. Line shelving with a shelf-liner that is smooth, easily cleanable, and impervious to moisture to facilitate easy cleaning of the shelves.

Routine inspection conducted. Facility is a food store that sells mainly processed meats and cheeses. Facility is generally well maintained and in good sanitary condition.
All coolers meet temperature requirements
Display coolers for processed meats and cheeses at 4C or less
Deli cooler at 4C
Stand-up cooler up front at 3C
Walk-in cooler at 3C
Feta cheese display behind sneeze guard at 3-4C
All chest freezers at -18C or below
Temperature logs maintained and up-to-date
Hand wash station (two-compartment sink) adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
Bleach sanitizing pails present in all meat processing and sampling areas, stocked with a 200 ppm chlorine residual bleach solution
Staff aware of how to use two-compartment sink method to wash, rinse, sanitize equipment
Deli slicers generally well maintained - ensure that the slicers are disassembled and cleaned every 4 hours
Samples for food products are in small batches designed for high turnover (< = 2 hours)
Back storage area is organized. Items are organized on shelving and generally kept off the floor
No evidence of recent pest activity at time of inspection
All products audited (e.g. processed meats) were all from an approved supplier. Cans in retail and back storage area were in good condition and free of dents
