Observation (CORRECTED DURING INSPECTION): Tomato sauce found in hot holding unit that was still warming up (43C).
Corrective Action(s): Hot holding units are not meant to heat food, only to keep hot foods hot. Reheat sauce to over 71C and allow hot holding unit to get to 60C before placing any hot food in it.

Observation (CORRECTED DURING INSPECTION): A container of garlic butter/margarine and roasted garlic with oil stored at room temperature. Owner stated that fresh presses garlic is used. Garlic in any oil can pose a serious botulism risk.
Corrective Action(s): Store all fresh garlic in oil preparations in the cooler.

Observation: 1) Clear plastic bag found used to cover line cooler inserts in main kitchen area.
2) Raw wood lining the top of the short wall downstairs next to the meat slicer
3) Light covers not replaced *this is a repeat infraction*
4) Butcher block cutting board has not been replaned as required in previous inspections
Corrective Action(s): 1) Plastic bags are not intended for reuse and cannot keep food cold as well as plastic or metal. Replace with a durable material that is intended for food and reuse
2) Paint raw wood to make it easily cleanable. Due: 1 month
3) Replace light covers that are missing in food preparation areas. Due: 1 month
4) Replane or replace worn cutting board that was identified in previous inspection: Due: 1 month.
