Observation (CORRECTED DURING INSPECTION): No approved food-contact surface sanitizer was readily available for use at time of inspection. Operator had been using a Simple Green Industrial Cleaner and Degreaser + Palmolive detergent mixture.
Corrective Action(s): Discontinue this practice, as Simple Green is a cleaner and not a sanitizer. Food-contact surfaces, dishes, and utensils must be properly sanitized with an approved sanitizer that is safe for food. Staff prepared a fresh bleach and water solution for sanitizing at time of inspection. Mix 1/2 tsp of regular, unscented bleach per litre of water for proper concentrations, and do not mix with detergent.

Comments

- Hand sink was provided with hot and cold running water, liquid soap, and paper towels.
- Bleach sanitizer solution was prepared at time of inspection. 100 ppm chlorine residual detected - ensure to re-label your spray bottles accordingly. (See violation code 302 above).
- Three-compartment sink available for manual warewashing maintained in sanitary conditions. Sink drain plugs available. Ensure to also prepare the above solution in your sanitizing sink for sanitizing dishware.
- Food prep sink maintained in sanitary conditions
- All coolers measured at 4C or colder.
- All freezer temperatures satisfactory.
- All refrigeration units were equipped with accurate thermometers.
- Equipment maintained in sanitary conditions
- Good food storage practices noted.
- Dry storage areas satisfactory. Additional racking/shelving/utility carts have been added, as per previous inspection. Please continue keeping all equipment off the floor.
- Staff have valid FoodSafe level 1 certification
- General sanitation satisfactory at time of inspection. *Area behind/underneath the deep fryers beginning to have accumulation of grease and food debris - ensure to deep-clean at least once a week.
- Back screen door has been installed since previous inspection - good.
- No signs of pest activity noted at time of inspection.
