Observation (CORRECTED DURING INSPECTION): Rice hot held in rice cooker at 45 degrees C. Operator stated the rice was reheated in the microwave prior to placing in the hot rice cooker.
Corrective Action(s): Ensure rice is rehated to over 74 degrees C then placed in the rice cooker. Rice must then be hot held at or above 60 degrees C.

Observation (CORRECTED DURING INSPECTION): Hummus and feta cheese internal food product temperature ~8 degrees C at the preparation cooler. Ambient air temperature for lower section of preparation cooler ~10 degrees C.
Corrective Action(s): Ensure all cold potentially hazardous foods are stored at or below 4 degrees C. Hummus and feta cheese relocated to walk in cooler.

Observation (CORRECTED DURING INSPECTION): Left hand sink by the cash register paper towel dispenser empty.

Observation: Food debris and ice buildup observed inside the chest freezer in the now decommissioned walk in freezer.
Corrective Action(s): Thoroughly clean the interior of the chest freezer. Correct by September 28, 2021.

Observation:
- Quats sanitizer feed line from bulk quats bag under the 3 compartment sink requires servicing. Operator is manually diluting quats to 200ppm and verifying concentration using test strips.
- Hummus and feta cheese internal food product temperature ~8 degrees C at the preparation cooler. Ambient air temperature for lower section of preparation cooler ~10 degrees C.
Corrective Action(s):
- Service the chemical dispensing system at the 3 compartment sink and ensure quats is dispensed at 200ppm. Correct immediately.
- Operator adjusted the preparation cooler to a colder setting. Ambient air temperature still at ~10 degrees C. Service immediately. Ensure unit is capable of maintaining 4 degrees C. In the interim only store small quantities of cut vegetables in the inserts. Any leftover after 2 hours must be discarded.

Chest freezer at -19 degrees C.
Back area freezer at -20 degrees C.
Beverage cooler at 4 degrees C.
Ice cream freezer at -21 degrees C.
Donair spits turning. All meat is shaved off then undergo a secondary cook step on the flat grill.
